The Ritz-Carlton, Perth is introducing Songbird Sundays at their award-winning bar Songbird. From 3 October, hotel guests and locals alike can delight in the open skies and breathtaking views of Elizabeth Quay, whilst enjoying a set course menu showcasing some of the finest produce in Western Australia.
Songbird’s new offering highlights six share plates that encourage guests to reconnect with one another. Gather with close friends to settle into an afternoon of light seasonal fare, toasting to warm memories while sipping on a glass of Veuve Clicquot or a cocktail inspired by the native birds that fill our skies.
While they soak up the atmosphere, guests will enjoy a menu by Chef de Cuisine, Stephen Cocks, showcasing seasonal ingredients from celebrated local suppliers.
“For this menu we have used mindful cooking techniques like smoking and slow-cooking, which respect the quality produce and allow the flavours to shine. I wanted to bring a relaxed feel to the dining journey with dishes that encourage connection over a shared meal,” said Chef Stephen.
The informal grazing menu starts with a cold course featuring Japanese flavours, with a house-smoked salmon, beetroot chips and dill and yuzu crème fraiche. This influence is also seen in the Japanese pumpkin with miso caramel, crispy kale and candied pumpkin seeds – a superbly sweet and full-flavoured side.
An indulgent fried chicken waffle with burnt orange maple and slaw evokes pleasant memories of casual fare, with refined flavours that appeal to a sophisticated palate. The showstopping smoked slow-cooked lamb rump with salsa verde, caramelised pickling onion and fresh herbs and dukkha mixes strong aromatic spices for a memorable main dish.
A dessert of wild rice pudding with coconut chips, raspberry, cocoa nibs and pistachio praline rounds out the afternoon as guests bask in the last of the sunshine and the afternoon draws to a close.
Reservations for Songbird Sundays are available in two-hour sittings from 11am-5pm on Sundays from October 2021 to March 2022.
